Darryl’s been begging for some banana bread, but I was too busy last week to make any for him. Since I don’t want to be considered a bad wife I pulled out all my baking cookbooks today and found one that his grandma Thaden gave us. It’s fairly simple, and the good thing is I had all the ingredients here @ the house. Yipee!!! It’s cooking right now so we won’t know how it’s gonna taste until later, but here is the recipe incase you’re interested.
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup butter
1/2 cup sugar
2 eggs
1 cup mashed, very ripe bananas
1/2 cup chopped walnuts
1/2 cup raisins
(Makes 1 loaf)
1.) Sift together 1 3/4 flour, baking powder, baking soda, and salt; set aside.
2.) Cream together butter and sugar in a bowl until light and fluffy, using electric mixer @ medium speed. Add eggs, one @ a time, beating well after each addition.
3.) Add dry ingredients alternately with bananas to creamed mixture, beating well after each addition using electric mixer @ low speed.
4.) Stir walnuts into batter.
5.) Pour batter into greased 9 x 5 x 3 inch loaf pan.
6.) Bake @ 350 for 1 hour or until wooden pick inserted in center comes out clean.
7.) Cool in pan on rack 10 mins. Remove from pan and cook on rack
8.) Wrap in aluminum foil. Let stand overnight. (Loaf will slice better after standing).
Not sure we’ll be able to do the last instruction. I can already smell it, and it’s making my tummy grumble. I’ll let you know how good (or bad) it tastes.
Our little family currently consists of Darryl, me, along with our pups Lucas & Lily. We've been together for 14 years now, and we love every minute of it. I enjoy all types of crafty things such as knitting, crocheting, photography, sewing, and making cards. Darryl enjoys gaming (both PC and PS3), playing guitar, cooking, and just veggin out. Lucas and Lily just love to sleep, eat, and pets.
