What a Crepe

I decided on Thursday to have Saturday be Margarets day. And on said day I would make her crepes and coffee for breakfast, take her to the beach to walk in the snow and sand, take her out for a nooner (snack), take her out for a bite, and then do a little bit of shopping.

Well, mother nature had different plans for us today. It’d been snowing all night and I think we probably received over 4 inches minimum by morning, so I soldiered on with breakfast hoping that the snow would lighten up.

I put together a crepe recipe from a three different recipes and I got the iron skillet piping hot. All I could think about was my step dad Terry in the back of mind before I put the batter in the skillet. Him and my mom had a tradition where they’d make crepes for Christmas breakfast and I distinctly remember him saying, “SHIT!!!” when; what I’m assuming; a crepe didn’t flip over like it should. So this whole time I’m thinking to myself that maybe these thin pancakes might be stubborn little boogers.

I took the plunge and I grabbed my 1/4 cup and dropped the batter into the skillet. I then quickly picked up the skillet and swirled the batter around make sure the excess got to edges and everything cooked evenly. Then the time came to flip it over and I skidded the spatula under the crepe and voila it came up without a problem and all was good.

With the hard part done I went ahead and started filling each one with a mixture of cream cheese, cottage cheese, homemade raspberry jam, and sugar. I figured the raspberry jam would do good since I put orange zest into the crepe batter (my personal touch) and boy was I right. It turned out so good.

Margaret and I had four crepes on our plate and I was full by the third one. Margaret was stuffed by the third one. Everything turned out really good. This was the first time Margaret ever ate a crepe and she was pleasantly surprised. The only thing that we’ll do differently next time is use fresh fruit. Possibly use locally grown strawberry’s next year when I make crepes again.

So there you have it. Crepes in the morning, crepes in the evening, crepes at supper time, when you have crepes on a bagel, you can have crepes anytime!!!
